DOP TRADITIONAL BALSAMIC VINEGAR OF MODENA 


T

he DOP Traditional Balsamic Vinegar of Modena comes from an ancient tradition which has been handed down for generations. It is obtained by cooking  into opened boilers the  must of selected grapes coming from Modena areas such as Ancellotta, Berzemino, Lambrusco, Occhio di Gatta, Sauvignon, Trebbiano, Sgavetta and the subsequent natural fermentation and acidification  through racking from year to year in smaller and smaller barrels to obtain a perfect ripening and slow aging. After at least 12 years the Vinegar drawn from the smaller barrel can claim the title of "Traditional" Balsamic Vinegar of Modena, while the one taken after 25 years is called "Stravecchio." 
Used raw is great with the Parmesan cheese and strawberries and delicious with salads, it enhances the flavors of each dish. The stravecchio is excellent with roasts and stews.
