Since ancient times vinegar has been one of the basic sources of man. It has been mentioned several times in the Bible, and we can find traces of it in ancient Egypt and a widespread use in ancient Greece. In Roman times on the table it never lacked the “acetabulum”, a cup full of vinegar in which each tablemate used to dip pieces of bread to clean the mouth between a dish and the subsequent and to facilitate, at the same time, the digestion. The job of vinegar maker has always been important and has been handed down from father to son until today. New technologies have allowed this activity to increase the amount and range of distribution of vinegar products.
