It is obtained by cooking  into opened boilers the  must of selected grapes coming from Modena areas such as Ancellotta, Berzemino, Lambrusco, Occhio di Gatta, Sauvignon, Trebbiano, Sgavetta..

The Creams of Balsamic Vinegar of Modena are obtained by cold condensation. They are a form of creativity and taste in the cooking able to flavor, stuff  and decorate  with fantasy any dish, from appetizers to desserts.
