VINTAGE By hand, in the first ten days of October
WINE-MAKING After natural decantation the must is separated from the dregs, inoculated with selected yeasts and fermentation at a thermo-regulated temperature.
RE-FERMENTATION It is re-fermented in autoclave with the medium Charmat method. This process lasts about 3-4 months and is necessary to confer the characteristics of a sparkling wine.
MATURING It rests in stainless steel autoclaves, then it is refrigerated and filtered. The packaging starts 8-9 months after harvest.

ALCOHOL 12,50%
SERVING TEMPERATURE 8° - 10° C. 
FOOD PAIRING It is excellent with fish dishes, appetizers, white meat and pasta dishes. Excellent as an aperitif.
STORING Store in a cool place (15 ° C) with low humidity
